Sprouted Flax Omelette Bites

These are perfect for making a head of time for a quick and easy brea. Nutrition is important so let’s start your day right. These can be made many different ways so feel free to mix up the ingredients. 

 

Ingredients:

  • 8 large eggs ( or egg substitute)
  • 1/2 cup milk 
  • 1 cup shredded cheddar cheese ( you can use vegan )
  • 1 cup bell peppers diced 
  • 1/2 cup baby spinach roughly chopped
  • 1/4 tsp salt
  • 2 scallions thinly sliced
  • 1/4 cup sprouted Flax meal 

Directions:

Preheat oven to 350 f

Grease muffin tin ( you may used reg or mini tin)

Beat together eggs add in other ingredients. 

Pour into muffin tins, you should get 12 reg size muffin tins or 24 mini ones.

Bake for 20-35 mins for reg and 15 for mini .
