Sprouted Barley Pretzels

Sprouted Barley Pretzels

These yummy pretzels are made with sprouted barley, easy and fun to make.

What you will need is a mixing bowl, course salt, and parchment paper.

Dough:

1 cup sprouted barley flour

1 1/2 cup reg flour

1 tsp salt

1 tsp sugar

2 1/4 tsp instant yeast

1 cup warm water

Top cup boiling water

  • 2 tbsp baking soda
  • coarse, kosher or pretzel salt optional
  • 3 tablespoons unsalted butter, melted
  •  

     

    Lets get started:

    1 cup sprouted barley flour

    1 1/2 cup reg flour

    1 tsp salt

    1 tsp sugar

    2 1/4 tsp instant yeast

    1 cup warm water

    Mix all ingredients into mixing bowl and let beat for 5 minutes until dough is soft, smooth and slack.

    Let rest for 30 minutes and cover with plastic wrap.

    While dough is resting prepare you topping. Boil water 1 cup water and pour into 9 x 9 inch dish add baking soda and let dissolve.

    Preheat oven to 450.

    Transfer dough to lightly greased or floured area and divide into 8 equal pieces.

    Roll each piece of dough into 16 inch ropes and form into pretzel shape. Let rest for 5 minutes. Set into baking soda water and spoon water over pretzel for 2 minutes. This give the pretzel that nice brown colour and chewy taste.  Let them rest for  5 minutes. Place pretzels on to tray with parchment paper and let them bake for 9 minutes. Melt 3 tbsp. butter and cover pretzels with butter. Sprinkle with salt and enjoy.
