Sprouted Flax Carrot Muffins:


Carrot Flax Muffins:

These muffins are very moist and you can add anything into them. Adults and children love them you will not be disappointed with these! Let us know what you think of them or if you have any questions.

2 c. flour...
1 c. sugar ( you may use any choice of sweetener )
2 tsp. baking soda
2tsp cinnamon
1/2 tsp salt
2 c. grated carrots
1/2 c. raisins
1/2 c nutmeats(optional)
1/2 c. coconut
1/2 c. sprouted flax flour
1 apple peeled & chopped finely
3 eggs
1/2 oil (olive oil, or coconut)
1/2 unsweetened  applesauce
2 tsp pure vanilla extract ( optional)

In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. Stir in carrots, raisins, nuts(optional) coconut , and apple. In a small bowl, beat eggs, oil, and vanilla(optional). Stir this mixture into flour mixture, until batter is moist. Spoon into muffin tins. Bake at 350 for 20-25 minutes. Enjoy!
