1 ¼ C. all-purpose flour
¼ C. Living Flour™ Sprouted Barley Flour
2 Tbsp. organic cane sugar
1 Tbsp. baking powder
½ tsp. ground cinnamon
¼ tsp. salt
2 large eggs
1 C. apple juice
3 Tbsp. butter (melted)
½ C. chopped apple
Combine the All Purpose flour, Living Flour™ Sprouted Barley Flour, sugar, baking powder, cinnamon, and salt in a large bowl. In a smaller bowl combine eggs, apple juice and butter. Slowly add the wet ingredients into the larger bowl, mix until combined. Stir in chopped apple. Pour the batter onto a heated skillet. Bake on one side till golden brown, flip and bake until done. Makes about 10 6-in pancakes.
Serve warm with butter and maple syrup.
