Raspberry Raw Cheesecake

Creamy and fresh this is something you will want to try.

Ingredients:

2 cups raw cashews (soaked overnight in water)

1 tsp fresh lemon juice

1tsp pure vanilla extract (optional)

1 cup raw almonds

1/2 sprouted bio kinetics flax

1 tbsp. coconut oil

1 cup fresh raspberry

Directions:

Drain and rinse cashews in a food processor cream cashews, lemon and vanilla until it is creamy and fine. Set aside. In food processor add almonds, flax and coconut oil and pulse until crumbly. Put into 9 x9 baking dish. Add creamed cashew mix. Refrigerate. In food processor coarsely pulse berries. Spread on top of cashew mixture. Top with fresh berries, coconut cream etc.  Keep refrigerated. Enjoy
